Tahini is a condiment made from sesame as the main raw material. It is widely loved for its strong aroma and rich nutrition. The production of tahini undergoes a series of delicate processing steps to ensure the quality, taste and safety of the product.
1. Raw material selection and preparation
The first step in producing high-quality tahini is to select high-quality sesame seeds. Factories usually purchase sesame seeds that have been strictly screened to ensure that the grains are full, free of impurities and mold. Before entering the
tahini production line, the sesame seeds will be further removed by machines to remove dust, stones and other impurities.
2. Sesame cleaning and baking
Cleaning is a key step. The fine impurities on the surface of sesame are removed by running water. After cleaning, the sesame needs to be baked. The baking process not only removes excess moisture, but also stimulates the aroma of sesame. Usually, automated baking equipment is used to control the temperature and time to avoid sesame being burned.
3. Peeling (optional)
Some high-quality tahini require peeled sesame seeds to increase the delicate taste. The peeling process removes the outer shell of sesame seeds through mechanical friction or chemical soaking. This step can reduce the bitterness of the finished product and improve the purity of tahini.
4. Grinding Process
After roasting or peeling, sesame seeds are fed into a grinder, which is the core of tahini production. High-speed grinding equipment crushes sesame seeds into a fine paste-like substance. To obtain a more uniform texture, sesame seeds are usually ground several times. At the same time, the temperature needs to be strictly controlled during the grinding process to prevent high temperatures from damaging the aroma.
5. Blending and homogenization
After grinding, the tahini may be blended with an appropriate amount of vegetable oil or other ingredients as needed to adjust the consistency and flavor of the tahini. Next, the tahini will be homogenized to make its texture more delicate and uniform.
6. Filling and packaging
The prepared tahini will be sent to the filling machine and packaged into bottles or cans according to different packaging requirements. The filling process is carried out in a sterile environment to ensure the safety and shelf life of the product. The packaged products will be labeled, batch recorded and quality tested.
